mmmmm, mondays: stuffed chicken breasts


if you're looking for something to make that looks beautiful and tastes fantastic, look no further. this one takes a little work but the result is fabulous. enjoy!

stuffed chicken breasts



12 boneless, skinless chicken breasts

2 T. butter

(2) 10 oz packages of frozen spinach. defrost packages and squeeze thawed spinach to remove all water content

1 package mushrooms, diced (dump the mushrooms in a food processor and chop to save time)

1 medium onion, diced (i use one bag of frozen, chopped onion)

2 T. oregano

1/2 T. parsley

2 T. savory

2 lbs. ricotta cheese

4 c. mozzarella cheese

2 eggs

1/2 cup bread crumbs

directions:
preheat oven to 350 degrees.

saute butter, onion and mushrooms until vegetables are slightly transparent; remove from heat. add spinach, oregano, parsley, savory, eggs, ricotta, mozzarella and bread crumbs. mix well and set aside.

fillet each chicken breast with a sharp knife. open breast and pound lightly to thin breast.



place approximately 1/3 to 1/2 cup of stuffing mixture in the middle of each chicken breast.

fold breast to cover stuffing and place in a greased baking dish.
bake at 350 degrees for one hour.
