mmmmm, mondays: oreo cheesecake cupcakes (guest blogger: tarialyn from little miss mama)

our post today is from tairalyn at little miss mama.
meet tairalyn. we know you will love her as much as we do:

I shop all too often, considering how much I hate getting mail from my friends Visa & Mastercard.

I sip from Fine-China that is far older than the Queen.

I daydream of a closet filled with Chanel & LouBoutin.

I'm expecting a baby girl in September.... now if this doesn't sound like a commercial for a debt consolidator or marriage counselor then slap me twice and call me "betty"!

Married to my very best friend in December 2008, expecting our first child in September of 2011 - I'd say my life is right on track. Wouldn't you? Prior to hoping on the Blogging Band-Wagon I used my creative mind as a Wedding Planner. Owning and Running my own business at the ripe old age of 19, I have always believed age is a mere number and you can fake anything at any age. Planning Weddings for women twice my age, all over the world was a major accomplishment in my mind. After finding out my husband and I were expecting, I decided to toss the Planning aside, as I didn't need the Bridal Drama and move on to easier things in life while I carried our little gem.

Started my first Blog LahTeaDah, all about things that made me smile Life, Tea and Fashion - I started dreaming of the day I could toss the 9 to 5 aside and do this full-time. I'm sure I'm not the only one with this crazy dream. I decided that I should broden my horizons in the Blog World, and open them up to include my Motherly Journey as well as my DIY obsession. This is when Little Miss Mama was born. With the thought of how much EXTRA TIME I'm going to have on my hands when the baby comes {insert jokes here} I am working on opening an ETSY Shop to feature and sell all my DIY including Custom Stationary Design and Shoe and Hair Accessories. Looking to build the Little Miss Mama empire to surpass the comb-over... Oh sorry! I mean Donald Trump!

I still shop all too often - however now it contains more baby sizes

I still sip from Fine-China - however now majority of the sips are Herbal, avoiding a WILD CHILD hooked on Caffeine in 3 months

I still daydream about a closet full Chanel & LouBoutin - however now its doubled, in matching Mummy and Baby Size

as promised.....here is how to make her *amazing* oreo cheesecake cupcakes:

Oreo Cheesecake Cupcakes

My husband is an absolute sucker for Cupcakes. When I saw this recipe, I knew I would save this one for my back pocket, and the next attempt I would make at my reasoning for the cost of a Chanel Bag, I would whip this one out to sweeten the pot. But my sweet tooth got the best of me and I just couldn't wait. I made them last night and MY GOODNESS..... Brilliance

Oreo Cheesecake Cupcakes

Don't mind if I do...

Ingredients

24 Oreo's {or if you go to a store that doesn't have Oreo's a Cream Filled Cookie will do}
1 lb Cream Cheese | room temperature
1/2 cup Sugar
1 tsp Vanilla Extract
2 Large Eggs | room temperature, lightly beaten
1/2 cup Sour Cream
Pinch of salt

Preheat oven to 275 degrees.

Line Muffin Tins with Paper Liners.

Place 1 whole Cookie in the bottom of each lined cup.

With an Electric Mixer on medium high speed, beat Cream Cheese until smooth.

Slowly add Sugar, and beat until combined.

Beat in Vanilla.

Slowly add in Eggs, a bit at a time, beating to combine.

Beat in Sour Cream and Salt.

Stir in chopped Cookies by hand.

Divide batter among Paper Cups, filling almost to the top.

Bake, rotating the pan halfway through, until filling is set, about 35 minutes.

Transfer to a wire rack to cool completely. Refrigerate at least 4 hours.

Remove from tins just before serving.

When you make this recipe, and find yourself sitting down to eat 4 and 5 in a row, and feel no shame, don't blame me..... Call Martha and give her grief she came up with the recipe!

XO
Tairalyn
