ingredients:
1 1/2 lbs ground lamb
1/2 small onion, minced (1/4 cup)
1/2 cup chopped fresh flat leaf parsley
1 t. dried oregano (or 2t. fresh)
salt and pepper
4 pita breads (mini hamburger buns or wraps work, too)
sliced tomatoes and lettuce (for garnish)
container of pre-made tzatziki (you can make your own, but I go for the store bought)
directions:
heat grill pan or bbq to high (or plug in a george foreman).
make burgers:
in a bowl (with hands) combine the lamb, onion, parsley and oregano; season with salt and pepper. gently form the mixture into 16 small patties, about 3/4 inch thick. (i have also made these into regular sized burgers and they are equally as fabulous).
cook:
grill until medium (about 3-4 minutes per side). to serve, warm the pitas or buns on the grill or in toaster oven, halve (if using pita) and fill with the burgers, tzatziki, tomatoes and lettuce. otherwise, if using buns, just build like you would a regular burger.

Oh, yum... I LOVE Greek food. Had souvlaki for dinner last night! :)
