mmmmm, mondays: crock pot french dip sandwiches

this one is so easy and really delicious.

french dip sandwiches

1 large roast

1 envelope dry onion soup mix

1/2 cup soy sauce

2 cloves crushed garlic (1 heaping teaspoon of store bought minced)

2 cups beef stock

3 cups water

2 large white or yellow onions - sliced

1/2 cup butter

for rolls:

6 french rolls

12 slices provolone cheese

garlic powder

butter

saute sliced onions in butter over medium heat until transparent. while onions are cooking, put all other ingredients into a crock pot. when onions are cooked, add the onions and the butter to the crock pot.

cook on low for 6-8 hours.

right before serving, open french rolls and butter one side of the sandwich. lightly sprinkle spread butter with garlic powder. place two slices of provolone on the other side of the roll and broil on high for about 3 minutes or until cheese is melted and rolls start to toast.

remove roast from crock pot and shred. place several pieces of shredded roast onto each sandwich roll. remove some of the onions from the crock pot and place on each sandwich (optional). ladle the broth mixture into small bowls for dipping. enjoy!
